Pumpkin Spiced Rice Save to MyRecipes

Hi all

I know its been a super long time since my last post on sharing any recipes. Sorry, I have been busy with my retail biz in Singapore. Recently I was invited by a local Supermarket chain in Singapore to do a LIVE Cooking demo. I have to use Pumpkins to cook. Here's the recipe I did..
just for fun..see the ad they did up for me :

Sharing here..I think its wonderful for all of you here to do this as you will probably have lots of pumpkins after Halloween!

Pumpkin Spiced Rice
Recipe by Gina Choong

Serves 4
Ingredients

2 cups of fragrant rice(washed, drained)
1 brown onion
10 pcs shitake mushrooms(sliced)
1 tsp cajun spice
300g pumpkin(skinned, cut into thick chunks)
3 tbsp olive oil
1 tbsp sea salt

Method
1. Heat up pan and add olive oil. Add onions to sauté till fragrant.
2. Add diced pumpkins to fry for 3 to 5 minutes till it forms a thin crispy skin.
3. Dish out and set aside.
4. Leaving the olive oil in the pan, add mushrooms to fry for 2 minutes till soft.
5. Finally add washed rice, cayenne spice and sea salt to mix.
6. Turn off the heat and add fried pumpkins to mix with the rice.
7. Pour contents into a rice cooker, adding sufficient water to cook.
8. Once cooked, fluff up the rice with a pair of chopsticks and serve hot with roasted cashew nuts or almonds.

Looks wonderful! I'm a pumpkin fanatic.

How did the demo go? Are your fingers intact? I think I'd be so nervous I'd seriously hurt myself. Good thing I chose to become a writer (very little public contact)!

very well.. Thanks! But its not my first time though. I've been doing this for over 3 years now. With different companies each time. The same company is asking me to do a special New Year's Day celebration Cooking demo on Healthy Cooking on 3rd January 2010. I will share what I am going to do next year.
