Hi, hunterj.
You'd have to be more precise to get a good answer. What do you mean brown? Dark bread using white flour? or do you mean rye bread? Bread with white flour but also something dark like molasses? Or do you mean the crust being brown but the bread white? What is the kind of bread you're aiming for if it's not with whole meal flour but is brown?

Some 40 odd years ago, my wife and I both remember fondly, often getting brown bread. It was not wholemeal, was brown right through, so I would say it would have started out as being white, then with some darkening agent, such as molasses.

Are you looking to make just a loaf or many loaves?

My porridge bread sounds like what you are looking for....but it's a production recipe....the smallest amount it makes is 13 loaves.

I bet you are talking about the bread you used to be able to get (in the olden days :roll: ) when the bread actually had flavor! And it was brown!
Any bread you make yourself will help you remember the good ole days. I used to make wholewheat bread (it included molasses), and it was brown, and tasted good.
Oh to have the time to bake bread again!

I would be baking just one loaf at a time.

We bake all our own bread ( about 4 loaves a week) in our bread making machine.

I used to bake an icelandic brown bread that sounds like what you are looking for once again my formula is comercial sized but i found this one for a bread machine on line. i havn't tried it but i think it is worth a shot

The following recipe is for a 2 lb. loaf - Black & Decker Bread Machine. If using other sized machines, scale recipe accordingly.)

Ingredients:

1 1/2 cups Water
2 tbsp. Powdered Milk
2 tbsp. Butter (or shortening)
1/3 cup Demerrara Brown Sugar (or white sugar)
1/4 cup Black Strap Molasses
1 1/2 tsp. salt
3 1/2 cups Whole Wheat Flour
1 1/2 tsp. Yeast*

Method:

Measure and add ingredients in the order listed into Baking Pan.
Select: Sweet Bread setting (3hrs, 50 min.) "normal" crust.

Cool on a wire rack for at least 15 minutes before slicing.

Notes:

1. If milk is substituted for the water, omit the Powdered Milk.

2. * Use Fleishmann's Bread Machine Yeast. If you prefer to use Traditional Dry yeast, Rapid Rise yeast or Quick Rise yeast, you will have to increase yeast amount by 1/4 teaspoon in your recipe.

3. Recommend using: Rogers Bread Machine Whole Wheat flour. It seems to make a nicer loaf of bread that also rises better than regular Whole Wheat flour.

But lockport, this is a whole wheat bread. There are plenty of those that are brown. Didn;t hunterj want a white flour bread that was brown?
