Avocado Bread Save to MyRecipes

So thinking of ways to use my baby avocados I decided to make some bread.. I was a lil worried about doing this as i thought the bread out turn out to be a hideous colour and when pming jonesg neither of us knew how it would turn out..

Well it is now one of my new fav breads. Something like a Zucchini bread or a banana bread..

heres the recipe i used

3/4 cup mashed ripe avocados
3 eggs
1 cup vegetable oil
3 tsp vanilla
3 cup all-purpose flour
1 1/2 cup sugar
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
3/4 cup walnuts, chopped
1 9- x 5-inch loaf pan

Preheat oven to 350 degrees. Grease the loaf pan and set aside.

Mash the avocados and mix with the eggs, oil, and vanilla. Blend well. Add the flour, sugar, cinnamon, salt, baking soda, and baking powder. Fold in the nuts. Bake for 1-1/2 hours. Cover the top loosely with foil after the first 30 minutes

You can use your favourite banana bread recipe and substitute with avocado.

However i just found a Chocolate Avocado Banana bread might try that next!

Sounds great Jen. And chocolate avocado banana bread sounds amazing. Your being brave enough to try avocado bread is one thing but being brave enough to try those three together? Whoever did it the first time would be interesting to talk to. Image Image Image

from what i read in the recipe they were making banana bread didnt have enough bananas so they sub. with avocados.. and Ta da new bread born

It is really tasty and has a gorgeous texture, it is smooth and uniform.
I have made this a few times. It goes well with "main dish" salads or cold soups; when you want something a different or more substantial than a baguette or just a slice of bread.

Sounds like a good combination. Got the above recipe printed off and heading to market for avacados...hey wait will the generic types in the produce market work? Not exactly in an avacado hot spot...

Clive i find i can still taste them when i first used this recipe i was a bit leary too about cooking them that long but it seems to work...
