This started as a search for something to do with a couple of green tomatoes from the garden. We picked a few nice ones with the intent to make Fried Green Tomatoes, but we picked too many. I still had two nice green ones begging to be used, so for labor day I decided to get experimental and ended up with an awesome casserole that was outstanding! My wife said it reminded her of Jambalaya, so I called it:
Jambalaya Casserole
1 TB butter
1 medium onion, diced
1 Lg carrot, diced
2 medium green tomatoes, chopped
2 small chiles, chopped (Add to your heat factor - I used green ones and seeded mine)
2 cloves garlic, crushed
1/2 lb medium shrimp, peeled, deveined
1/2 lb smoked sausage, sliced
2 cups heated chicken stock
1 cup rice
1/2 sharp cheddar, shredded
Saute the sausage and shrimp together until the shrimp turns pink and set aside. Then saute the onion, carrot, garlic, chiles, and tomatoes together in the butter until the onion begins to clear. Add the vegetables, shrimp, and sausage to a 3 qt. casserole dish. Stir in the rice and chicken stock. Cover the dish tightly with foil or tight fitting lid and bake in a preheated 350 oven for 45 minutes. Once removed from the oven, stir in the cheese and serve.
