Hi Glory! Welcome to C2C! Sorry to take so long to get back to you...had to get my oriental cookbook from my prep cook.....I found a recipe for Sayur Lodeh - Indonesian vegetable soup. I sound kind of like what you're looking for.....Here goes: Serves 6
8oz chicken breast of beef, cut into dice
1/4 C peeled shrimp
1 onion, peeled
2 cloves garlic, crushed
1 fresh red or green chili, seeded and sliced
1/2 inch terasi or blachan (dried fermented shrimp paste)
3 macadamia nuts
1/2 inch laos root (ginger can be substituted)
1 t sugar
oil for frying
1 1/4 cups coconut milk
5 C chicken or beef stock
1 eggplant, diced and salted, then rinsed and dried
2 cups green beans, diced
1 small wedge white cabbage, shredded
1 red or green pepper, seeded and finely sliced
Reserve meat and shrimp.
Cut 1/2 onion in slices, reserve.
Pound remaining onion, garlic, chili, terasi, nuts, laos and sugar to a paste. Fry with a little oil in wok until a rich scent is released.
Add the reserved onion and meat and cook 3-4 minutes.
Stir in coconut milk and stock. Bring to a boil and simmer for a few minutes.
Add eggplant and beans and cook for 3-4 minutes.
Add cabbage, pepper and shrimp. and cook for additional 1-2 minutes. The veggies should be still crisp when served.
This soup is usually served with a rice dish - Nasi Kining Lengkap - Festive Rice
