Hi everyone I am new here ..This is my first time posting..

I had some questions about recipes for soups ..
More specifically, I am looking for good and authentic recipes for an Asian soup I had a few years ago.

I can't recall all the details of it, as we went to this eatery while on the go, but I think it had eggplant in it..I think it had a miso base..It may have been spicy, this is hard to recall ..I also think it had a bit of beef chunks in it..Why I dont recall is I'm pretty sure I tossed the rice in and it was dark and at night.But it was a good soup..I think other ingredients may have been green peppers in this(unless that was okra Image)..This is about it..But I'm pretty sure on the beef and eggplant part..I'd appreciate your feedback and thanks again!:) Also if anyone can direct me to the soup area here and any Asian soups recipes I'd truly appreciate. Hello Glory,

Welcome to C2C, As for the soup. I cant tell you exactly what type is that. You mention beef and eggplant. Theres plenty of soups like that. And as for asian, you can mean Indian, Japanese, Korean, CHinese, Thai, Etc.... You did mention MISO base. I think that more towards the japanese and korean soups. Are you certain that there is miso inside? More details will be preferred.

I thought I was clear that I was referring to info. about this soup as being a Japanese or Korean soup.But yes I am interested in Asian soups as a whole.

I am aware eggplant and beef can be an ingredient in any soup but I think I was pretty clear I was referring to an Asian soup that is not Indian. I tried to find the place and an online menu to no avail. Nor have I had success with finding it online. It was late a night and dark and we kind of threw rice in as we were eating on the road. This was a few years ago. Most of the ingredients mentioned and have tried to be clear. But thank you:)

Why thank you CC:) That is most kind of you:)

We are semi-vegetarians. I say semi because now and then we eat better quality meat, but not too often:)

I like things a bit on the spicy side, where my Husband prefers the spicy stuff a bit more on the mild side:)

I like almost anything with garlic. I like Thai food for the other Asian, ( I really love all Asian food) and my Husband likes the wonton soup. (I mention since I'd be cooking for not just me:) )..

I tend to like the same soup that has a base like wonton and/or with garlic, guess that that's like chicken broth base. But I also like the ones that are more pungent or spciy like hot and sour.

I am recently taking a big liking to fried tofu, though I am not sure how to make that well yet. I love ALL seafood but wouldn't go for it in a soup unless a chowder type, so I guess shrimp might be the one choice there of all of the non fish. And I'd make an acception for the soups which are the Japanese that I've had which are miso type bases. ( A slight medical condtion has me leaning towards seafood and seaweeds as they help my health too).

So, I'd say garlic, mildy spicy, shrimp and tofu. As for vegetables, I like cabbage a lot and naturally, love moo shoo:)
I am also a big pad Thai fan, though I know this is not Chinese but is Asian. Mushrooms and baby corns are always good and onions, peppers.

CC you know I am honestly not sure about that miso base on that soup.

I will say this I am pretty sure it had green peppers, eggplant and some little bits of beef chunks. It was a very dark night, and my Husband and I went into a restaurant. Now I am pretty sure it was a Japanese place but it may have also served Korean too, (It was in Palisades Park NJ area a very Korean community). It was in the Fall of 2002. I remember I wasnt feeling up to staying so we had the food bagged and took a nice drive and kind of just ate on the road..

It was very dark and the foods had names that weren't familiar to me, and it's quite possible I was eating a hybrid of some spicy beef soup with tofu that I blended rice and miso soup into..

Since I don't know the name of the place, I can't really call them to ask..For Chinese soups I can take either mild like I mentioned, or ones that have some spice or kick. I don't really enjoy soups with fish bones in them, unless they are used as stock and that's all. We had a hard time finding the beef in that Japanese/Korean soup and thought we got giped. But ths soup was really good! However at after 10 or 11 on a dark night driving around dark cities it was pretty hard to tell much more..We got back late and that's the story. Wish I had more info. I went to a Vietnamese place a few years ago and had cinnamon soup. That was pretty good, but I don't remember what was in it.....there must be something about Asian soups and memory loss. Image Image

Hello Glory,

Guess you really like asian/chinese food. I can give u some good recipes on this one. Gimme a while to type my authentic recipes. I would prefer to you give my very own creation rather than extract from eslewhere. It can be quite unreliable.
Since you mention soup, prawns, phad thai noodles. I did post one phad thai noodles recipe in some previous postings.
wonder if you tried some thick chinese soups? They are bascially 2 types, one is the clear and light consistency, the other is very thick and rich. Its time consuming to make excellent chinese soup. But let me tell you. It will be worthwhile. Let me think of a few and will type out for u.

Here a few im gonna provide u. But it will take sometime. I go according to what you mentioned of your favorites.

1. CC's Chinese Seafood Soup
2. CC's Stir fry seafood combo
3. CC's Sweet and Sour Crispy Tofu
4. CC's Braised Garlic Fish
5. CC's Stiry fry veges (mushroom, baby corn, onions, pepper and snow peas will be inside =O )

Desserts you keen? LOL

As for the asian soup you had, I tried once at a korean stall, they serve a type of soup with chicken fillet, sliced and a type of miso base broth. It was spicy and had some mix veges in it. Also come with egg. But seriously, im not very good at japanese or korean dishes. Sorry.

Hi Glory! Welcome to C2C! Sorry to take so long to get back to you...had to get my oriental cookbook from my prep cook.....I found a recipe for Sayur Lodeh - Indonesian vegetable soup. I sound kind of like what you're looking for.....Here goes: Serves 6

8oz chicken breast of beef, cut into dice
1/4 C peeled shrimp
1 onion, peeled
2 cloves garlic, crushed
1 fresh red or green chili, seeded and sliced
1/2 inch terasi or blachan (dried fermented shrimp paste)
3 macadamia nuts
1/2 inch laos root (ginger can be substituted)
1 t sugar
oil for frying
1 1/4 cups coconut milk
5 C chicken or beef stock
1 eggplant, diced and salted, then rinsed and dried
2 cups green beans, diced
1 small wedge white cabbage, shredded
1 red or green pepper, seeded and finely sliced

Reserve meat and shrimp.
Cut 1/2 onion in slices, reserve.
Pound remaining onion, garlic, chili, terasi, nuts, laos and sugar to a paste. Fry with a little oil in wok until a rich scent is released.
Add the reserved onion and meat and cook 3-4 minutes.
Stir in coconut milk and stock. Bring to a boil and simmer for a few minutes.
Add eggplant and beans and cook for 3-4 minutes.
Add cabbage, pepper and shrimp. and cook for additional 1-2 minutes. The veggies should be still crisp when served.
This soup is usually served with a rice dish - Nasi Kining Lengkap - Festive Rice

LOL Thank you Chinese Chef yes I DO love Chinese and Asian food. Being half Middle eastern I lean towards lots of the eastern fare, but of course not just the Middle east .

I love many soups because they are so healthy and pull together so many healthy ingredients. I mean many dishes do, but I like the warm soups, and also how the stocks can be made and the bases, very nutritious. PLUS, I am limited in the kitchen I am in now, as we are staying as guests in someone's house and I can only get the old stove working when my Husband's here (Old stove which blew up at me in March of 2003 and leaves me using the stovetop alone until/unless my Husband is around to light it in the evenings. Then, I can bake *sighs:)) I WONT touch that thing ovenwise after what happened to me...But this is another story..My point that I am somehwat limited in terms of stove use and utensils. Our family was hit money--wise quite badly by the local 9-11, and so we are just not in a position to buy very many special ingredients or cookware. *I wanted to mention this so anyone sharing with me would know I am somewhat limited in making some things but I LOVE getting the replies and recipes I WILL keep and collect them for some now and when we are back in our own kitchen.

PS I dont know about Asian desserts, but I love almond and am the marzipan queen:) And, of course, i will love chocolate always Image I'd love to study about Asian desserts. We know a few Indian and of course my familys is like the Lebanese, but I'm not aware of many far eastern desserts.

Something tells me there would be things used like almonds, cherries, green tea, coconut milk.infusions and the like..It's hard to recall, as I mayve eaten at places years ago with such desserts but a long timenow since financial duress.
