Killer MiInestrone Save to MyRecipes

It takes awhile, but it's worth the effort.
3 carrots
1 med. yellow onion
1 rib celery
1/2 green pepper
6 cloves garlic
1/4 bunch parsley
1/2 lb salt pork
1 14oz can diced tomato
1/2 cup tomato paste
1/4 cup beef stock
1/4 cup dried basil
1 tbsp dried oregano
1/2 lb string beans
1 1/4 cup peas
Place 1 carrot, onion, celery, green pepper & garlic in food processor and pulse until finely chopped, put in a large, heavy pot and add parsley, salt pork and 3 quarts water. Bring to a boil, reduce heat and simmer, covered for 4 hrs .

Transfer salt pork to food processor and process until fat liquifies and meat is paste (30 seconds), pass through seive back into pot, skim fat. Add tomato, tomato paste, beef stock, basil, oregano and 1 tsp pepper. Simmer at med. heat, covered for 2 hours.

Add 4 cups water, increase heat and bring to a boil, slice remaining 2 carrots thinly, add with peas and green beans. Reduce heat and simmer partially covered until veggies are tender. Season to taste.

dave you dont add any pasta? I like that little one that I can't quite remember the name. two words, de ---

David,

Great looking recipe - Autumns definitely soup weather and this one is at the top of the list. My sons were always kids who wouldn't try anything new or different looking and soup wasn't on their favorites list, so I was surprised when they tried and loved Minestrone - In return, here's Aunt Amelia's recipe for what they called "Minestrone de Paisano", or Peasant Minestrone.

2 cups chopped cabbage

couple chopped carrots

2 chopped turnips

couple stalks coarse chopped Swiss Chard or greens of your choice - I like Ecarole or even Celery greens
a little parsley

2 cups fresh Limas or other broad beans

couple nice pieces of boneless pork ribs, tenderloin, or boneless pork chops.
2-3 links of sweet Italian sausage

adequate water or beef/chicken stock if you prefer - about 2-3 quarts

Salt & Pepper, Peccorino Romano and a couple Bay leaves

put all the chopped vegetables and beans into a large stainless pot along with the pork, add boiling water or stock and cover tightly cook over low heat for 1-2 hours.
Add the Salsiccia and cook another half hour or so untill the veggies are tender and the sausage is cooked through.

Serve immediately with tons of grated Peccorino or Parmesan, and if you like cook a little pasta of your choice (I like linguini broken into 1"pieces) and add to the soup.

My favorite addition was a hard salami sandwich with roasted sweet peppers on crusty Itallian bread - Now that's peasant food man!

These sound great guys. I've always had mine with a bit of pasta in it also. There's nothing like a great bowl of minestrone. I haven't had that in ages.

Sometimes I add pasta Brenda, sometimes I don't, just depends on what I've got on hand at the time. It's good either way though! Image

ChefBren, are you thinking of De Ceccio? if so, that's a brand, and I thik that the pasta would probably be Orzo...

yes! thats it, thatnks Roberto, that was bugging me adn a quick search didn't bring it up.

yes Dave, I'm sure its good without, but this pasta actually holds well in soup

Dave, that's one of the recipes I copied a while back, isn't it? I still haven't made it, but now I will - soup weather is here!!!
