Getting Cold Save to MyRecipes

Making this tonight as the temp is dropping

"Shambles" Chilli Con Carne


500 grams / 1 lb of beef mince or beef topside cubes chopped small
1 large onion
80 gram chopped closed cap mushroom.

1 tablespoon of olive oil
460 gram / 14 oz can of chopped tomatoes
460 gram / 14 oz can of red kidney beans
2 cloves of garlic finely chopped
2 teaspoons of minced chilli or 1 to 2 fresh chillies to tast
2 tablespoons of tomato paste
1 to 2 teaspoons of dried or fresh oregano
1 teaspoon of cumin
½ to 1 cup of brown beef stock or water
1 teaspoon of light soy sauce
1 Dash of Balsamic vinegar
1 dash of Woustershire sauce

salt and pepper.

cook the beef, onions and garlic in the oil until soft. Add the mushrooms and herbs cook for

a couple of minutes more, now add the rest of the ingredients simmer for an hour or so until

the chilli has the desired constituency. Serve on a bed of rice .

It is even better kept overnight

Yum, sounds good Dave - you're right it's time for some chili and I agree it's better the next day. (Like spaghetti, one of my sons always asked for leftover spaghetti for his B'day dinner Image )

What condiments do you top your chili with?

The chili does sound great - Dottie has a recipe we like but always looking for new twists, and I am partial to recipes that call for cubes or chunks of meat as opposed to ground - Aversion to excess fat I guess.

CJS - Have you ever fried your left over spaghetti in a little olive oil til crispy around the edges? - My wife routinely asks me to make extra pasta whenever we eat it so we can fry some up the next day - Just blast the cold pasta with a healthy dose of Parmesan or Romano and put it in some hot olive oil - turn a time or two till crispy on the outside.

Believe it or not Dottie's favorite way to consume it is to make a sandwich with the pasta and fresh Italian or French bread

Oh my, that would probably be a favorite of mine also!!

I have in the past used l/o pasta/spaghetti/whatever as a crust for something like a frittata (in other words - needed to clean out the frig... Image ) Love it!!

I hope you enjoy it Lorraine, I tend to like more heat than that and end up putting more chilli in. I also if I have a bottle open slosh some red wine in,

It was great, Dave. Didn't have kidney beans so cooked some lentils. Didn't have fresh chilis, so opened a can of chipotles. Thanks for the recipe.
