Christmas Ale Orange Cranberry Bread Save to MyRecipes

Postby big dog chef on Mon Dec 06, 2004 4:37 am

With all the "holiday beers" this time of year, I'd like to share this recipe for a quick bread that I really enjoy.

Christmas Ale Orange Cranberry Bread

Makes 1 Loaf

Preheat Oven to 375 degrees

Dry Ingredients:
3/4 cup sugar
1 Tbs. Orange Zest, minced
3 cups AP Flour
4 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt

Wet Ingredients:
2 Eggs, Lightly Beaten
Juice of 1/2 Orange, about 1/4 cup
3/4 Bottle (9-10 oz.) Christmas Ale - I use Breckeridge, being a good Colorado Boy and all.
3 Tbs. Vegetable Oil or Melted Butter
_________________________________________
1/2 cup Sweetened Dried Cranberries, Coarsely Chopped

Mix wet and dry ingredients in separate bowls.

Pour wet into dry, mix until everything is just moistened, gently fold in the cranberries.

Scrape mixture into greased 5 1/4" x 9 1/4" loaf pan. bake for 40 -50 minutes.

Cheers! and Merry Xmas!
