Hopefully we can continue this project with the addition of some desserts and of course, more entreés!

What was posted in the Part II finale -
"...and with this wonderful sounding soup, thank you Dave, I'm thinking it's time for Econ. dinners Part III.

And I'd like to add another dimension to the next part. I have 74 recipes typed in - what I'd like to see in addition to the entrées are some economical desserts. Let's don't go further astray with appetizers, salads, etc. - just stick with entré and desserts. How do this fly with ya all?

This is such a fun project and I'm so glad everyone is contributing....well, almost everyone. "

I'll start with a dessert - We rented a houseboat every fall for about 15 years with friends and we always had these sometime during the trip.

ROOT BEER FLOATS

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 scoops frozen yogurt, vanilla -- non-fat
1 tablespoon chocolate syrup
1 12-oz. Root beer -- sugar-free

Place scoops of yogurt in large (plastic houseboat glasses) soda glass.
Cover tightly & put in freezer.

Note for serving:
Drizzle 1 Tablespoon chocolate syrup over frozen yogurt.
Pour root beer over chocolate & yogurt.
Allow root beer to foam.

NOTES : a fruit float can be made using sorbet, clear diet soda & fresh fruit.


(and you gotta know it was very rarely - if ever - that we didn't use full fat ice cream and diet Root beer, I think not! Image Image )

That's easy Jean- -

Caramel Banana Pie
3 cans (14 oz.) Sweetened Condensed Milk
1 large Banana
1 pie crust

Remove labels from milk cans.
Boil the Sweetened Condensed Milk covered for 3 hours.
Cans must stay covered with water -adding more as needed in a soft boil- turn cans unside-down mid way through for even cooking.
After cooking remove cans and let cool.
Cans may be stored this way indefinatly- - -handy for making a pie at anytime.

Pie Crust- You can use any crust- scratch or store bought- pastry, graham cracker or shortbread.

Bake your pie crust as needed.
Cool
Slice banana into the bottom of cooled crust.
Open cans of Sweetened Condensed Milk and spoon over Bananas.
Refrigerate until chilled.
Enjoy

Note: For a 9" Tart only 2 14oz. Cans are needed

Count me in Jean,

This will make a pumpkin lover out of anyone.

Pumpkin Ice Cream Freeze
Serves 8

Preparation :30 Cook :00 Stand 8:00 Total 8:30

1 1/4 cups ginger snap cookies, crushed, about 25 cookies
1/4 cup sugar
1/4 cup butter, melted
1 quart vanilla ice cream
1 cup canned pumpkin
1 cup brown sugar
1 teaspoon vanilla
1 teaspoon nutmeg
1/4 teaspoon ground ginger

Mix the first 3 ingredients, holding back 1/4 cup of the crumbs, in a bowl. Press the mixture into a 8x5 inch baking dish and set aside.

Combine the remaining ingredients in a large bowl and pour over the crust. Freeze overnight. Serve with the reserved crumbs on top and maybe add some chopped nuts.

Chocolate to The MAX

Recipe By :Bill
Serving Size : 6 Preparation Time :0:05
Categories : Desserts-Ices

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
6 ounces semisweet chocolate chips
1 large egg
1 teaspoon vanilla extract
1 teaspoon almond extract
1 tablespoon creme de cacao
1 cup whipping cream

In a blender, combine together the chocolate, egg, vanilla, almond extract and Creme de Cacao while microwaving the cream until just beginning to boil. With the blender going add the hot cream and blend well. Pour into small sherbet or wine glasses.

Chill for several hours and serve.

Basic Granita Formula

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 cups fruit juice
1/2 cup sugar
1 cup water
2 teaspoons fresh lemon juice or Limoncello

In a medium saucepan, combine the sugar and water and bring to a boil, stirring until the sugar dissolves. Let cool. Stir in the fruit juice and pour into a chilled 9- x 13-inch metal pan. Place in the freezer and freeze, stirring every 30 minutes until the mixture is firm.

Yields 4 cups.

Ok Jean....remember, you asked.

Texas Cake

2 C. flour
2 C. sugar
1/2 C. butter
1/2 C. shortening
1 C. water
1/4 C. drk unsweetened cocoa
1/2 C. buttermilk
2 eggs
1 tsp. baking soda
1 tsp. vanilla

combine flour and sugar in larg bowl.
inheavy saucepan combine butter, shortening, water and cocoa.
stir and heat to boiling
combine with flour mixture
add buttermilk, eggs, baking soda and van.
Mix and pour into jelly roll pan
bake at 400 deg. for 20 min. or until tested done in center
pour warm frosting over cake as soon as you take it out of oven.

Frosting

1 stick butter
2 tbsp dark cocoa
1/4 C. milk
1 tbsp vanilla
3 1/2 c. powdered sugar

mix butter cocoa and milk
heat to boiling...stirring
mix in rest of ingred and mix until smooth.

Did I give you some Marionberry and/or plum juice Jean? I made sorbet with the marionberry using Limoncello....oh my..same thing for the plum.

Banana Brittle

Servings: 16
Yield: 4 cups

Notes: MAKE AHEAD:
The brittle can be wrapped in wax paper and kept in an airtight container for up to 5 days.

Categories: Candy & Snacks

2 tablespoons unsalted butter
1 tablespoon vegetable oil
5 tablespoons sugar
3 semi-ripe medium bananas, very thinly sliced crosswise
3/4 teaspoon cinnamon
1/4 cup unsalted peanuts, minced

Preheat oven to 350º. On a large baking sheet, melt the butter in the oil. Spread to coat the pan evenly and sprinkle with 3 tablespoons of the sugar. Cover with the banana slices in a slightly overlapping layer. Sprinkle with the remaining 2 tablespoons sugar, the cinnamon and peanuts. Bake for about 20 minutes, or until the slices around the edge are crisp and golden. Let cool slightly so they firm up. Transfer the browned slices to a plate and bake the rest for about 3 minutes, or until browned.

Chicken Stew

INGREDIENTS:
2 cups cubed cooked chicken breast meat
1 (16 ounce) package frozen mixed vegetables, thawed
1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of chicken soup
2 cups skim milk
1 tsp dried sage

--------------------------------------------------------------------------------

DIRECTIONS:
In a medium sauce pan combine chicken, mixed vegetables, cream of potato soup, cream of chicken soup, sage, and milk. Heat through and serve.

Beef Stew

INGREDIENTS:
1 pound cubed beef stew meat
1/4 cup all-purpose flour
1 tablespoon paprika
salt and pepper to taste
1 1/2 tablespoons teriyaki sauce
1 onion, chopped
3 carrots, sliced
1 stalk celery, sliced
2 potatoes, cubed
1/2 pound mushrooms, quartered
2 cloves garlic, minced
1 bay leaf
1 1/2 cups beef broth
1/2 cup peas

DIRECTIONS:
Place beef stew meat into a slow cooker. In a small bowl, mix together flour, paprika, salt, and pepper; sprinkle over beef stew meat, stirring to coat. Stir in teriyaki sauce, onion, carrots, celery, potatoes, mushrooms, garlic, broth and bay leaf.
Cover, and cook on Low 6 hours, stirring occasionally. Add the peas in the last hour.

Okay, I don't know what you could call this, but my Niece eats it often.
Ingredients:
1 Ripe Banana
I pack instant Hot Chocolate Mix
Aerosol Whip Cream (or in Canada, Aerosol Kool-Whip)
Open Packet. Pour mix on plate. Roll banana in mix. Transfer to clean plate, top with whip cream. Eat. Repeat as neccessary. Image

Or...if you didn't want to dirty the plates you can just open the packet of Hot Chocolate mix and dip your banana in and enjoy..
