Hello Everyone,
I have a question that has probably been asked a few times but I can't find the answer to. I am currently in a dispute with my FOH manager about the sequence of service. What is the proper order in which courses should go out. I'm not sure if this is the forum to post this question, if not direct me to the correct one. Can someone please enlighten me on this.

Well, I don't know about "proper way". Which proper way are you wanting? French service? Russian? Continental?

Here in my neck of the woods - the order of service is partly determined by the client. I work catering at a college and most of the time things go like this...

Apps
soup
salad
mains
dessert

Occasionally the French department has a function. They like things to go like this...

App/amuse bouche
soup
cleanser
main
salad
dessert

Then there are the functions at the president's house which mostly go like this..

Drinks, hors doevres (butlered)
Salad/apps (simultaneously served)
Main
dessert/coffee/tea

or Japanese style...

Everything at once and family style.


The whole upshot of this is that Proper Service is sometimes up for situational interpretation. Work together with the FOH to get a standard that works for you.

When I have menu planning with wedding guests, and this question pops up, is say that I like:

App
soup/fish
entree
cheese
dessert

but I also tell them that they are paying, so its up to them!!

Beer first, then them fancy ritz appetizers, then the rest of the beeyah.

In my world an appetizer IS the 1st course. What you all would call appetizers are what I call Hor d Oeuvres. So:

Hors d Oeuvres
an Amuse Bouche
Appetizer
Intermezzo
Entree
Dessert
Espresso/Cappuccion
Armanac or other after dinner apertiff
