Take some items on your menu and give them finesse add truffles caviar some luxury ingredient
Also you have to design the menu around your staff and kitchen
Can they execute it
Grill, saute, broil, deep fry, garde manger, oven balance
If possible seasonal, local
Presentation is nice but flavor always comes 1st
