Multiple Course Meals Save to MyRecipes

Postby WYchef on Tue Feb 06, 2007 2:57 pm

We have an in house function called the Casper Cullinary Club every month its A $100 dollar a head dinner usually 5 to 7 courses. This is my 15th one and I'm a little out of steam I've already revamped both my dinner and lunch menus this month and completed my banquet and catering menus, not to mention a seven course aphrodisiac menu for Valentines I was wondering if any of you could give me a little inspirationvia coused menus you have done in the past. If this is heaven where's my Saute Station????

Take some items on your menu and give them finesse add truffles caviar some luxury ingredient

Also you have to design the menu around your staff and kitchen

Can they execute it

Grill, saute, broil, deep fry, garde manger, oven balance

If possible seasonal, local

Presentation is nice but flavor always comes 1st

Happy to help send me a PM and I'll send you some ideas
