Postby cheftoddf on Wed Mar 07, 2007 3:46 pm

so i am trying to figure out what the classical name for chicken scallopine that is dusted in flour, then dipped into a mixture of egg, parmesean cheese and fresh parsley, then sauted til a golden brown and served with meuniere sauce, and turned mushrooms is called...any takers? for some reason the place that i work at was going under the assumption that it is called chicken francaise. i know that is not the answer. any help would be awesome.
