I live out in the middle of no mans land i was hoping someone could tell me a good place to purchase some of these specialty ingredients--Calcium Chloride
Carrageenan: Kappa, Iota, Lambda
Gellan Gum
Lecithin
Methyl Cellulose

Sodium Citrate
Transglutaminase - Meat Glue

This is Ferran Adria's company and he is pretty much the force behing MG. He has most of the things that you are looking for plus recipes and applications.

This is an American based company that was started by Chef Goldfarb from Room4Desserts. He also has most of everything you are looking for and the prices are a little cheaper.

Alternatively, you can just search google for food grade chemicals and get what you need. I've ordered from both of the aforementioned sites and was very pleased with the products.

www.xenexlabs.com are a good supplier of food grade chemicals and Methyl Cellulose.

http://www.ajiusafood.com supply Transglutaminase and are happy to provide free samples through their website. Be very careful when you're using it.

Xantham and Lecithin I get very cheaply at my local health food shop.

http://www.texturaselbulli.com/ENG/contacto_01.html has a list of US suppliers for the El Bulli Texturas range but I've never used them.

I've visited the Willpowder website but find it obscenely overpriced.
