i keep having a problem with build up

i know its because the cooks leave them closed to keep them hot and I told them hit it with vinegar when its hot and scrape them

but the little plastic rakes are melted

sounds like it is time to take the thing apart and do a major cleaning job on it.

Are the grill plates cast iron or steel?

depend on which kind they are will help you decide what type of degreaser you use.

I would remove the grill plates and soak in heavy duty degreaser and water. then clean with a good stiff brush. then let dry. then oil and bake (cure).

but have them do it under your supervision. they will respect them a little bit more when they know that they have to clean them.
