Hey guys,

I have a working interview/staging that I have to do tommorow night, and I was wondering if you have any tips/advice on what to do and wear.

They said that they'd be providing the jacket and pants, etc. but should I go there in informal clothes before I change or stick to nicer stuff?

Wear the same clothes you would've worn if it were a standard interview... someone may want to speak with you before you get changed and start working.

Come well prepared but don't bring tons of equipment.
All your knives should be very, very sharp.
You may want to bring a couple Ktowels... many restos they are in short supply and the guys you're working with may not be forthcoming.

Have a couple bandages and some Neosporin in your kit. It will draw less attention to you when you cut yourself on your newly supersharp knives.

Bring a small notepad and pen to take notes.
Bring a Sharpie so you can properly tag any prep work you do.

Listen more than you talk.
If someone asks you to do something and you are not 100% sure you know EXACTLY what is expected ask for clarification or a quick demo. You will look less a fool for not knowing how to debone a hamhock than for ruiining 10# of them.

I just sharpened my knives so I'm good on that front, and I'll make sure to carry some bandages. Image

I participated in a Tasting from a chef/applicant last night.

He spent $900.00 of his own money to impress us. Confidence was the least of his worries.

A little word of advice gathered from the mistakes of our recent stagaires: consider everyone in the kitchen to be your chef. In other words, do as your told and be humble about it. Cockiness during a stage is a great way to disqualify yourself.

I'll be starting on pantry doing salads and desserts and stuff. From what I saw tonight it gets pretty damn busy. Fun though. Image
