New Knives!! What To Do With The Old Ones? Save to MyRecipes

So I bought a couple new knives recently and they are great and I love them. But I am asking all of you what do you do with your old knives. You know what I mean, exactly how many 8 and 10 inch french knives do you have before you have a "problem."

Nul problemo. Just work in a big kitchen, good knives have a nasty habit of "growing legs", ie. disapearing, permanently borrowed, or just plain stolen.

Give them to me! Or you can just get wasted and leave them in a cab. Like i said, give them to me, because I did that. Seriously, if you're worried, sell them on ebay. Because I'll buy them. Hell, engrave your name, keep them for a few years, and when you get your food network show, sell them and retire.

Donate them to a local rescue mission kitchen or some such.

We had a disher who was moved up to the line. The kid did an outstanding job,gave 100% to any task he was given. He was a young guy helping to support his family, no way did he have money for his own knives. To show our appreciation for his hard work and commitment to the job, we each donated one of our "old" knives and put together a kit for him. you would have thought we had given him a bag of gold. anyway, that kind of started a tradition. certainly gives others incentive to give it their all.

All great ideas, especially Tom's soup kitchen/mission kitchen idea. Mine migrated home, where I tell my ever-loving that there is no way possbile for her to hurt those knives. Well, actually, she has found quite a few ways to hurt them, but I just don't care...

Since I've convereted all my knives to MAC's, I've put all my old Germans and French in a tool box that I carry with me to do cooking classes in private homes. Works great.
