Job Interview Save to MyRecipes

Postby bmorse on Tue May 08, 2007 9:20 pm

I've got a job interview next week that is my first "mystery basket". Any advice? Should I show up ready to cook or in interview attire and bring the whites to change into? Also, it's northern Italian. Any advice on reading material?
Thanks.

I was taught you never walk in from the streets in your whites. Bring them there and change.

I agree. I think it looks better.

As far as the basket goes, I'd do at least one classic and one more inventive dish to best demonstrate the range of your skills. Exhibit quality knife work in both. Take extra special care in your seasoning. But don't try too hard to do something outlandish. Odds are good they've seen it done before and you will only imperil the success of your preparations.

Good luck!

Thanks for the advice. I am a line cook applying for a line cook job. Never had to do one of these before.

Here's my advice as a Chef. Show your eagerness to learn and that you take direction (and constructive critisism well) and that your aspirations are to be a chef(which I hope they are) and youy should be fine. Oh yeah let then know you can cook lol.

Thanks DevlChef,
Yes I plan to be a chef eventually. I have been cooking on and off for about 15 years, I took a few years off to run my own business, and I have recently started the culinary program at my local community college. Is a little notebook off limits in this sort of thing?

A little notebook is not a bad thing to have when you go to a tryout, I had one at mine and even used it to take notes during the chefs critique. I got the job and continue to use the notebook at work to record methods for different dishes as well as my own ideas for dishes.

Good luck,

Thanks for all the advice everybody. I used my notebook and was offered a job. I'm not sure whether or not I'll take it yet though. It's an hour away and about the same money, it's a swank joint though. Awesome kitchen. Worth it just to see what unlimited funds can do with a kitchen.
