Caitlin, welcome to the boards!! There is a ton of information to be learned here on C2C and always a bunch of people willing to share their experiences. Take some time to read some of the past discussions, especially the ones about working in the industry prior to school. This is my big recommendation to anyone considering culinary school, no matter where you go.
While I can't speak for ICE or its program, my daughter is currently attending CIA. She graduated high school last June, entered in Dec, but had gone to a 3 year vocational school for culinary and worked as a line cook in various restaurants for several years prior to school. The experience, more than anything, will set you apart at school.
The CIA has a slightly older population, I think the average age is (or was) 22, you will find many students that are career changers as well as younger students that already have a degree, have decided for whatever reason that they don't want to work in that field, and are pursuing something else.
