How in the heck can I get that membrane to break loose without tearing off chunks of white? It seems random, some will peel well, bt at least 50% seem to rip. Grrrr....

Well im not sure of the EXACT science behind this but for me i find it to be a temperature thing, if i get them when there like warm i never have a problem. I find i i plunge them into ice water first or theyre fully chilled i have the biggest problem. Probably something to do with the expanding and/or contracting of that membrane.

If eggs are very fresh, they are more difficult to peel. Some people add vinegar to the water. Personally, I find that as long as the water is just simmering, not boiling while the eggs are cooking, peeling isn't a problem. Image

We bring our eggs to room temperature and then pierce the bottom of the shell with one of those egg piercers. We put them into simmering water that we have added a tblsp of white vinegar and SIMMER for 17 minutes. (Use a timer) Drain and plunge into ice water until thoroughly chilled. Perfect every time and no green rings around the yolk.

NOTE: Our altitude is nearly 6000 feet.

This is when you figure out if your supplier/grocery store is giving you fresh eggs.

Older egg shells will stick to the egg when they are cooked, even if you try and peel them warm.

With fresh eggs you can boil them, refrigerate them and peel them the next day with no problems.

Well in the UK we keep our eggs at room temp..

so i start with cold water... bring the egg and water up to boil 8min.

then ICE bath... the crack roll and peel!

I also get free range eggs from the egg lady.

LOL seems like everybody is the "eggman", all different techniques and all (most) work.
I do this and it works for me, eggs in cold water, bring to a boil for 2 minutes, turn off and remove from burner, cover for 11 minutes, then run cold water in pot until eggs just warm. Let sit for around 20 minutes and peel.

Ok, take your eggs, and crack slightly on the table on the large end, and then put in the water. This breaks the shell a little so the air comes out and water comes in. The water coming in will go into the space between the membrane and the shell and then you can peel no matter what temperature,.
some say to use a needle to prick a hole in the big end, but that is the stupidest thing i've ever heard. ever try to stick a needle into an egg shell? more likely than not you'll slide the needle to where your finger is and prick the finger. The cracking is so easy.

That looks like a good way to go.I have trouble sometimes.I have tried to peel the eggs in a large container of water(submerge the eggs)it helps some.But I would be interested in one of those gadgets. Image

HEy what about that machine i saw on TV that shoots the shell right off the egg? Could be dangerous in the wrong hands.
