of no immediate application in catering.

I dunno... I ran a place with a south/cajun theme that used about 200# of catfish a week.

It's a niche, but one that has a regional impact.
You will be always victorious if you will never enter into any contest where the issue does not wholly depend upon yourself.

A caterer, no, a consumer who has been at catered events and a sometime employer of caterers, when I always insist that any fish to be served isn't a week old.

Are we to assume you mean no more than a week from when it was alive?

Or a week since the restaurant received it?

To my mind, there is a very LARGE difference.

Here in the South catfish is a big menu item. (though not my favourite - we used to fish for it back home and throw it back as an inedible fish, though we call it barbel). Talking about fish, I sometimes shop at Fresh Market for fish, and they mark most of their fish as having been previously frozen. They seem to sell very little fresh fish.

With regards to old fish, I seldom purchase fish on a Monday.

Just to add; all catfish are not the bottom feeding [censored] eaters they are all portrayed to be. Channels, for instance, have terminal to subterminal mouths meaning they are more predatory than muddies. As far as fish go, fish eating fish taste better than crap eating fish. Go figure. The smaller ones taste better as well, due to the fact the larger ones get lazy and fat. Catfish are a huge part of industry in Arkansas, Mississippi, and Alabama (other states as well). There is no reason to buy foreign catfish any way.

Wasn't there an article months ago about some other SE Asian "catfish" that was raised just down stream from the local scatological dispersal / bathing areas?

AMEN!

We put out a trot line (sp?) every winter after the skiers leave the lake. This is what we catch and we enjoy catfish stew and fried catfish all winter. Image

On the other hand, our local high schools offer aquaculture as a class. There are "farms" cropping up all over the place. I can't vouch for stocking sources, but will be sure to check into it.

As a matter of fact, the property adjacent to the "Camp" that we want to buy has ponds ready to re-establish.
