Pork Butt, Anatomy Save to MyRecipes

I am trying to find the name of a piece of the boston butt, when you take the fat cap off it goes all the way across from where the bone shows, it almost looks like a tenderloin in size, but thinner and definately tougher, any ideas, or any ideas on where i can find this information, thanks.....Bill

Ask a veterinarian for the muscle name and go from there.

Would you be describing the "chuck tender?" It's the same anatomy on venison when I am butchering the hind quarter. It looks like a miniature tenderloin.

Bohica is correct, just the wrong side of the animal, Chuck, Mock or Scotch Tender are from the shoulder. This cut is shorter than a tenderloin.
The "thinner" description makes me think you may be looking at the flat iron, which is also from the shoulder.

It could be Teres Major is the name your looking for, but that muscle is already visable from the cut side of the Boston Butt so no need to remove the fat cap.
