Cold Soups Save to MyRecipes

anyone got some good cold soup recipes, aside from gazspatcho. i already have a nice melon soup recipe down, but as its too hot for soup, unless its raining, but i have to have a soup of the day. i have a lot of trust from my head chef, when it comes to soups, i pretty well have free reign. (i have truly earned this, at the risk of sounding cocky, i make awesome soups) so don't shy away from the strange sounding. if anyone needs hot soup recipes, i have a vast repetoir, but they not all exact, or even written down.

have you done some variations on gazpatcho?
try it with mango and basil
cantalope and perciutto
both done with gaz base
or
cold cherry
cucumber yougurt
potato leek
how about jelle, (shrimp and safron, crab and corn etc)make the day before and realy wow them

have you done some variations on gazpatcho?


I do a gazpacho variation, "golden" lobster gazpacho. Use yellow tomatoes (doesn't have the high acid aftertaste), yellow peppers and the usual gazpacho base but I try to keep the color different. Cold soups don't seem to move that well in my market area but the lobster gets them every time.

melon and mint soup (cantaloup, honey dew, watermelon, mint, yoghurt, honey,

chilled potato and leek soup with a feta cheese and spring onion pistou.

Vietnamese style gazpacho, with loads of fresh cilantro, basil and mint. add in crab, shrimp, garlic, scallions, ginger, lemongrass, and fish sauce to your basic gazpacho recipe. sub lime juice for the red wine vinegar.

chilled beet soup with pastis. ( make a chilled soup of roasted beets, hint of shallots, fennel, red wine vinegar and spike it with pastis. finish it with 5 peppercorn whipped cream.
All it needs is a little salt.... pepper.... mustard, catchup, sauce, flavour. -- Trapper

Chilled almond soup garnished with grapes. Super simple. Let me know if you want the recipe.

tomatillo tequila
Thai shrimp and coconut
southwestern style green pea
pineapple basil
peach ginger
spicy green bell pepper
watermelon guava

Chilled Honey-roasted peach and cardomom soup w/ vanilla cream

4 servings

3 lg peach(1 1/4-1 1/2 #) peeled 1/2ed and pitted
2 tb packed golden brown sugar(packed)
1/12 tb honey
1 1/2 c fresh oj
1/2 ts gr cardomon
1/4 ts sea salt
1-2 ts fresh lemon juice

1/4 cp creme fraiche
1 4 in pc vanilla bean split
fresh peach slices(optional)

preheat oven 350
line sheet pan with parchment
toss peaches sugar and honey in bowl
place cutside down on sheetpan roast 15 min flip and continue roasting until tender and juices begin to carmelize about 10 more min, scrape contents into food processor and let cool;blend until smooth. add oj card, salt and blend. Transfer to bowl season to taste with lemon juice. Refridgerate till cold.

combine vanilla seeds with creme fresh, garnish with vanilla creme and frsh peaches.

sweet thaks a lot guys, this will all come in handy, i am responsible for the soup o day five days of the week, and the other two days, they use my leftovers. no matter how good the soup is, if its hot outside and the soup is hot, it doesn't move. even when they request a soup for a banquet, never gets touched. our custies have seemed to have grown acustomed to my wierd soups, and are usually willing to give it a go. the looks i got from the servers the first time i made the melon soup, was priceless, it was like i ofered them poop. then they tried it, and suprise, suprise, they all liked it, and 3/4 of the 14 litres (almost 4 gal. for you people below the 69th parrallel) of soup i made, was gone. best part, next day i pureed the leftover, one sweet @$$ melon compote for my baked salmon special, which sold out. i can take almost any food and make a soup with it, and i can take almost any soup and make a sauce from it.

i don't like how cocky i sound when i describe my soup skills, but i can back it up. my FnB is amazed at my ability to use ingredients, that he otherwise doesn't like, and make a soup that he loves, eg; carrots and ginger, he doesn't like either, but he loves my carrot ginger bisque ( i know its not technically a bisque, just what i first heard it called)

confidence is either your best friend or worst enemy...keep it at a level that helps you succeed...not one that makes you an ass. nice soup ideas though... if you're really good at making soups and into it, buy and/or look at as many soup books and recipes online as possible.
