I have been approached by a guy opening a new operation that will be a basic simple island style grill. He does not need a chef after operation is up and running, but what he would like me to do is create and implement about 20 sauces that his people would be able to replicate. No problem with this part, the part that has me baffled is that I have no idea what to charge. Any input greatly appreciated. Pay rate here is comparable to pay rate in California.

My rate is $75 an hour for menu and/or recipe development, including research and travel time, plus expenses. If a client wants just a single recipe developed I will sometimes do them for a flat fee of $500, depending on the complexity involved and what the end use is going to be. If it is published for market development, then I get more. If it is for local use in a single location, then less.
