Can you please clarify something for me, I was recently told that women should not seperate eggs with thier hands because estrogen leaches from thier hands to the eggs and creates off flavors.Is this true? Please help

Daun I have never heard that - doesn't mean it's not true, but it sort of sounds like when women were banished from the "home" during their menses because they were thought to be unclean. Would it follow then that women who no longer produce estrogen would be able to separate eggs with their hands?

Personally I'd worry more about dirty hands, hands with scented soap residue, lotions, etc. than estrogen leaching from the hands. Oh, and I've used my hands lots of times and never noticed any off flavors. Image

Must be one really slow egg-separating woman or she has really thin skin and way too much estrogen--I don't wanta be around for this.

what makes this even stranger,,,this was told to me by the new head chef . thanks for all your replys, just doin as am told now,,risking salmonella by using the shells instead of risking "leaching estrogen"

Probably the only estrogen you have to worry about in foods is that fed to american cattle and other animals to make them fatter. That is a danger, not for the taste, but for the damage it does, esp to kids.

Just curious grendlemoder, what is the practice in Italy, or Europe for that matter concerning growth hormones in meat? Is there different, more stringent regulations?

yes, I know they are more stringent, probably because meat isn;t a big business with big lobbies, though i don;t know the specific legislation. Here, at least, even older people, pre-organic-foods generation people, want food that is "genuine", that is, no chemicals, no "medicines". Back when i first came here, in the 70s, my mother in law would only eat free range chickens, and as far as i knew, the term was not even introduced yet in the states. .

If your new head chef was not pulling your leg (or other misc. body parts) then I would check out his training. Sounds like it came from the St. Georges (Carribbean) School of Culinary, Mechanic, Dental, Medical and Lawncare Arts, by correspondence. Now available in less than a week and for only $695. Masters degree $100 more.
