Reheating Rice Save to MyRecipes

Postby judie on Mon Jul 23, 2007 9:19 am

Two of my neighbours joined us for a chinese from our local take away and she could not eat all of it as they give you double portions here!

She then said she was going to put the fried rice in the fridge and re heat it the next day.

I thought this was poisonous but Im not sure.
Does anyone know?

poisonous? that's very strange. I do it all the time here in Singapore. i just reheat the fried rice in the Microwave oven.

Fried rice are best eaten when its 'freshly' fried. leftovers, even after reheating by microwaving or steaming, seems to loose it fragrance and flavour.

so what I do with leftover fried rice in the fridge? I put them in a casserole dish, top it with cheese and have baked rice, asian style! Image

I dont know what to say. I do it all the time. I grew up in an enviorment where there was always a pot of rice and beans on the stove, the flame turned up anytime someone was hungry. It really is a wonder were all not dead yet.

oh..I don't cook too much for it to be reheated so many times anyway. after 2 rounds of reheating, I just junk the leftovers.

Cooked rice can be a medium for bacterial growth if it is improperly cooled and stored, as can many high carbohydrate foods. I usually make from left-over rice or rice that has been cooled and reserved for this purpose so mine goes through at least one cooling cycle before making the final dish. This means that the left over fried rice has gone through the cycle at least twice and if it is not properly cooled between stages bacterial growth is possible. The problem may also relate, in part, to the large quantities of rice processed in the restaurant or commercial setting where large quantities are made. It is far less risk in the home setting where the quantities are smaller. To avoid risk just properly cool, store, and reheat the product properly and the risk is virtually non-existent.

Bacillus Cerus, thats the boy, just leave your rice in a nice warm place for a few hours and all will be revealed, mainly lunch and breakfast if y' get a good dose, this isnt one of the really bad ones just inconvenient.

Judie, maybe you had a nurse in the family. A friend of mine, a nurse, said that when they studied toxins in nurses' training, the two most toxic foodstuffs - under certain conditions - were rice and peanut butter. Rice, in fact, can become a very strong carcinogen, according to her.

She said the discovery was made when they were studying the high incidence of cancer in a southeast Asian community. They found that the practice of making the rice in quantity at the beginning of the week and holding it throughout the week without refrigeration in giant earthenware containers, was a deadly practice. It didn't take long for people eating that 'old' warm rice to develop cancer.

Sometimes, information like that can throw quite a scare into people, so that they don't even want to eat rice period.

sophia

there is truth in everything there! but many people read such information at face value and when they tell others, the story gets distorted. Image

but then again, I feel that it is a sweeping statement to say the Asian cook so much rice to last the entire week. Rice is a staple ingredient in any Asian family. Its measured accordingly and cook for portions to last only 1 meal.

As a child, I grew up with very strict upbringing about eating rice.. Yes, just on eating rice! good grief!

after each meal, we are not to leave a single grain of rice on our plates. or the elders in the family will scold us till the cows come home. Image and then the 'grandmother story' of how rice are harvested will be repeated 10 times till we understand it and had it craved into our brains somehow.

we have told never to waste food. as its scarce. especially Rice.

there are never leftovers in a humble Chinese family. Thus during Chinese new year, the rice pot has a auspicious chinese word "Mun" stuck on it. It means "Always full". Literally it means the rice pot must always be fill with rice, as it brings food for the family, blessings for the entire year.

These days, we are eating a lot of processed food or food that was artificially preserved. and many of us are going to the old ways of cooking and eating food.
