BBQ Trout Save to MyRecipes

Does anyone have a favorite recipe for barbequing a whole trout?Do I butterfly it; bone it now or later?Any ideas would be appreciated!! Image

Are you talking rainbow or brook trout...like are caught in a brook while fly fishing?

Well, split from gill to tail on the belly side. Scoop out guts, rinse in the brook, a little oil if you have it, salt and pepper or other seasonings you like on fish and throw on the grill...preferably the one next to the brook. After a couple minutes, flip and cook til it flakes easily. YUM! I miss those days!

I leave whole and sometimes wrap with slices of bacon before putting on the grill. YUM!!

Actually, I must confess my neighbor catches in a nearby lake 3x/week and is going again Friday.He always catches a bunch; already cleaned for me and ready to cook!I plan on a bbq Friday with my fresh, already cleaned fish so I'll be ready to go on my gas grill.Thanks!BTW, the bacon idea sounds very interesting... Not to be Mr. Picky, but I was wondering if you were using the names interchangably as if they were the same species, which they are not. It is not as likely that they are dining on brook trout in Oregon as it would be rainbows/steelheads.

Oh no. Sorry to confuse the issue.

When we went to college in Boone, NC, we never came home after the first summer. One of our favorite things to do was go fly fishing during the summer. Both varieties were caught as well as brown trout. That was cheap eating for a college student and a lot of fun, too. Add a six pack and it got even better! Image

Try rubbing a thin layer of dijon on the fillets and broiling them. On the grill, I would gut and gill them and smoke them.

Sorry, never actually used a recipe for this. I looked it up to give you something concrete. Never had a grill basket in those days, but use one now with more delicate fish. I also never used the thyme sprigs, but I think it would add a nice flavor.

Here you go:

Camp Out Trout

Recipe By :
Serving Size : 0 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 whole trout -- cleaned
4 strips bacon
4 sprigs fresh thyme
1 lemon
salt and pepper to taste

Oil and preheat grill. Slightly cook the bacon in a frying pan, so that it's started to be cooked but still pliable. Rinse out the trout and pat dry with a paper towel. Place a sprig of thyme inside each fish.

Wrap each trout with a strip of bacon and secure with a toothpick. Place trout on grill or in an oiled grill basket. Grill 5-7 minutes per side depending on the size of the trout. When the meat turns opaque in the center and easily flakes then the fish are done. Discard bacon and squeeze a little fresh lemon juice over each fish. Serve.

I also like to stuff the belly of the trout with sliced tomatoes, onions, herbs, a little butter etc. Lay it on a greased piece of tin foil, drizzle with white wine, lay some sliced lemons on it (few) then wrap it up (not tight you want to make a bit of an envelope with it.) Place on the coals or in your case on the grill and cook away. Make sure you save and serve the juices! Yum Yum

I have been doing trout on a cedar plank - just like salmon and the flavor is wonderful! Some sliced lemon in the middle & on top works well. A contributor suggested a tarragon sprig and I think I'll try that next time. Enjoy! Image

Garball, I'm beginning to wonder if this is not a a magic to rubs/marinades? One I like.

I have tried it on ribs, now fish. Is there protein you would not try it on as a base?....Did it recently with a dophinfish before breading with flour, egg, ground walnuts and panko. Was GREAT!
