Scallops on a portable barbie Save to MyRecipes

On Tuesday, I plan on going on probably my last fishing/camping trip of the season. I am really craving scallops. Anyone have any recipes/methods/suggestions for doing them on a portable propane barbie. Could actually do them on the fire, but the spruce and pine firewwod we have uphere is not a great flavour for most foods.

When we do seafood on the beach I use a clam shell basket, makes life a lot easier. I take one with the long handle cut off, then flip it with a set of tongs over whatever we have for fire. Green chili hot sauce, a sunset and a case of ice cold Heiny's....nuttin better than that.

Marlene, you must carry along a skillet for frying up those fresh caught pan-size fish, right? Just take a little clarified butter (or bacon grease) with you and saute those little buggers up in that old skillet. The portable propane will get the pan hot enough to saute them properly, I'm sure.

Well now you've done it Jean, next time its the cast iron and CB, I'm gettin hungry sitting here working on a Sunday night, need to run out and get something to cook quick...it's a holiday weekend here (mothers day..The Queens birthday) and instead of at the beach, I'm stuck in front of a CAD station.....deserted by entire family who are guess where...at the beach!

On a recent trip to the lake I did an Orange-Saffron Butter Grilled Trout that would work nicely with your scallops and any trout you pull out of the lake Marlene...

I prepare the trout, romoved any fins and made a few slashes into the flesh. Rubbed them good with lemon pepper into the cuts and in the cavity, then placed them on a sheet pan and poured some fresh orange juice over them. Let them sit for 45 minutes or so.

While the fish was getting all delicious, I made a saffron orange butter...just some fresh butter, orange juice, lemon pepper and saffron threads...all stuff you normally keep in your camping cooler Image

Now prepare the grill and enjoy the view of the lake...

I stuck a lime wheel into the cavity and grilled those trout for about 5 minutes per side over a good hot flame...

Moments later after removing the bones, we drizzled the flesh with the melted butter...pretty darn tasty!

Well Jean, I have downsized my camping cooking equipment, but no one could pry my 2 cast iron and my 16" (well seasoned) steel fry pans out of my hands. Now the next hardest decision will be bacon or butter. Image

That is the nice thing about getting Tuesday and Wednesday off, most of the locals are working and not that many tourists come up here with boats. Image Yes, it is beautiful up here and the waters are so clean that you can easily see about 20 feet down in the water. Image

I just wanted to say Thanks! to both Jean and Dave!! Image The scallops turned out wonderfully cooked in clarified butter on a very hot fire, in my seasoned long handled steel frying pan. We lucked out and caught a couple pan sized lake trout, which I cooked using Dave's method, sans the saffron (couldn't find any in town), on the portable barbie. Absolutely awesome, Dave! Not a morsel of either dish left. Image The trout I brought home will be frozen in water to enjoy when the fishing season is all over. Image Sorry no pics. Dern battery hungry camera. Image
