Does anyone know whether or not you need a hood/fire suppression system for a convection oven? I have seen a few commercial kitchens where the range/flat top/grill were under the hood but the convection oven stood alone...

I've seen some convection ovens advertised as "no hood required" and even saw one at a trade show.

I think you need to check with your local fire marshal on specific models. Here in California there is a list of approved "hoodless appliances" maintained by the state.

most convection ovens do not require a hood or suppression system
check with the local fire marshal

It's not the oven - it's what you are making inside of it. Anything with fat content creating smoke will tell the tale. If you are using it to bake cookies, casseroles, meat with fat, you will need a hood system. Otherwise, your kitchen and entire facility will be filled with smoke.

Not totally accurate, there ARE ovens that include catalytic converters that virtually eliminate obnoxious emissions, but they are expensive.

I believe here in Virginia if it's a gas oven a hood is required; electric, not required.

Here in Georgia it's the same as Virginia, if it's a gas oven a hood is required, but if it's electric, then you don't need a hood. I have an electric convection oven in the "bakeshop" of my restaurant. And I haven't had a hood covering the oven since day 1, and that was 12 years ago!!
