would like to have some suggestions from peoples about few recipes i can try on a campfire...
few friends and i are going in camping this week end and we wish to make a menu for our super, something original we can cook on a campfire. We are about 8-10 peoples. Have few recipes to suggest?

First and foremost.. be sure to use only hardwood on that fire. A pine or most softwood fires will ruin anything you cook on them. Oak, maple, apple, cherry are good choices. Maybe bring along some seasoned logs for the "cooking" portion of the fire, altho transporting wood can be an issue, due to regs on insect infestations

Also, be sure to let the flames subside to a nice bed of coals... a heckuva lot easier to manage temps and avoid soot/ash in food.

Get a cast iron grill and do steaks Montreal!
Soak some corn on the cob in water for a couple hours and toss in around the edge of the coals, turn every 5 min or so for a total of perhaps 20 min

Double foil wrap some damp spuds and toss em in... move them around a bit of course.

Got mountain pie irons? And s'more fixins . . . cause you have to have s'mores when you are camping, I think it is a rule someplace!!

Veggies or potatoes sliced in foil with seasonings, then placed over the fire is simple but nice. I particularly like the non-stick foil for this. I have done everything from beef and pork roasts in Dutch ovens to wrapping a turkey in foil and roasting it over the fire.

here is what i taught for a menu:
- start with a Brie Chesse toped with pesto in a foil.
- then appetizers of stuffed dates with almond wraped with bacon and grilled till done
- main dish of grilled veggy/thinly sliced meat & cheeze in a bun to make a cheeze melt
- and 2 types of s'mors for desserts
graham biscuit/apple/pinut butter/caramilk squares/mashmallow
and
graham biscuit/nutella/mashmallow/banana

i think all of this will be very yummie Image

I love doing a bacon wrapped chicken roulade on a open fire grill when we camp. Wrap it up in foil then once the chicken is just done remove the foil and crisp up the bacon over the fire.

We used to do cinnamon apples. Core a red apple, fill with "red hots" cinnamon candies. Wrap in foil, toss in fire. Keep moving around until the apples are tender and you can easily pierce it with a knife.

Best thing to do is to go out & buy the great paperback by Dian Thomas titled "Roughing it Easy". It covers everything from food storage to a plethora of great recipes, made simple. Ideas for groups, too. Some of the recipes are so good I use them at home too. Image

When my middle son was a scout, some 25 or more years ago I had the extreme pleasure (need a little sympathy here, folks) of going on a weekend campout with him as a chaparone for three scout troops. I think my back is still sore from that weekend.

BUT, we fixed breakfast on Sunday morning by layering bacon in the bottom of a paper bag, breaking an egg on top of the bacon and putting the bag over the fire. They were really good. Just don't ask me the details, I've told you all I remember.

The technique is known by every Boy Scout, find one and ask him.
