All You Can Eat Jobs Save to MyRecipes

Postby slick4591 on Tue Sep 25, 2007 12:22 am

A week ago I did a gig for a local factory for 125. Their rule is to serve great food and have as much as the workers want during their one hour lunch. They wanted burgers and smoked sausage so last week was pretty easy. They went through 195 1/4 lb. patties and 20 lbs of sausage.

Got a call a couple of hours ago saying they wanted the same deal, except they want marinated chicken breast, cheddar mashed potatoes and green beans. Rolls along with it. I gotta say the amount of chicken and green beans has me perplexed. I'm guessing 80 lbs of chicken and eight #10 cans of beans. If I'm off base here help me out, please.

10 ounces of chix per sounds good, but you got 48# (give or take) of beans. Doesn't sound like a veggie crowd. Just go with one case of beans (6). Are you gonna put bacon and onions in with those beans? I love that.

You better put bacon and onion in those beans! I would be all over that stuff. Image

Yeah that's my favorite way of eating them too...but unless you don't mind pissing off non-pork eating types, you might think that over.

Feel free to doctor them up a bit we always do.

Herbed green beans

Just to prove my point I've stated on this board several times about how hard it is doing business where I live: Got a call a couple of hours ago telling me not to buy groceries for this event cause one of the big dogs nixed the price. He said $9.25 per person was too high.

Tom, I'll keep your information in my notes. I think I need to move.

No hashbrowns for lunch. Just mashed potatoes w/gravy. Other than that, you hit the nail on the head.

I tried to click on the links to the green bean recipes for 100 and got security site issues, so I could not go there.
